(100 points) “The 2019 'The Papas' Cabernet Sauvignon is a drop-dead stunning wine from Adversity Cellars in this vintage. This is an utterly monumental wine that displays incredible power, but with just enough restraint. As it slowly unwinds in the glass begins to seduce you with its incredibly perfumed aromatics of ripe boysenberries, blackberries and dark cherries, which are laced with exotic spices, iron, fresh violets, licorice and even hints of dark chocolate that all emerge from the glass. On the palate this possesses a gorgeous full-bodied texture, which is layered and structured with beautiful round, polished tannins that lead to the long, voluptuous finish. This is a simply mesmerizing wine that continues to evolve each second in the glass and while it is nearly impossible to resist today, it will surely have a long graceful evolution ahead.
