Mention Paris to most people and you’ll get a rude waiter story; Aaron’s is that he was ten, and the sneering Monsieur brought him wine instead of the milk he had ordered, because milk ‘ees for babies.’
Aaron found himself yearning for a French wine adventure. He asked Michel if he could find him a job somewhere. Heeding his master’s call (his mind filled with romantic expectations of pulling hoses around a cellar) he dutifully showed up at the appointed Chateau… only to be taken on as winemaker. So began 6 years of living and working in France, first as Winemaker at Château Troplong Mondot and later director of Château La Tour Figeac.
Ready to come home in 1998, Aaron phased himself back to California with a stint as Beringer’s “flying winemaker” making wine in France, Italy and Chile. Here’s when he met and wooed his wife, Claire, with his “impossibly romantic” lifestyle, and found another great friend and mentor, Jean-Louis Mandreau (winemaker at Château Latour from 1970 to 1983) who wasn’t so impressed with the lifestyle, but thought Aaron had a lot of potential. Ready to stay in one place for a while, Aaron took over as winemaker for St. Clement in 2001, then in 2004 he moved to Quintessa as winemaker and general manager.
In 2004, we purchased a 76 acre (.2 acres planted) property on Mt. Veeder and began to develop our dream of owning our own vineyards. In 2007 we launched Pott Wine and released our first vintage of Incubo, as well as our first collection of single-vineyard wines in 2009. The 2015 vintage marks the next big milestone for us; when our new vineyard was ready to make wines good enough to carry the purple seal of approval! The 2015 Viognier was released in 2016. The 2015 vintage estate reds, Incubo and Space and Time will be released end of Winter 2018.

"Tasting Notes: Aromas of honeysuckle, lemon curd, honeydew melon, lychee, almonds, white peach, petrichor, sugar cookie. Soft attack of shortbread, ripe peach, lemon and lime, honeydew melon, pineapple. Wonderful acidity and vibrancy on the mid palate with rich flavors of peach and melon. Finishes with great length and peach, honeydew and pineapple.- POTT
Winemaking: The Viognier is entirely fermented and aged in Italian terra cotta amphorae, so it never sees oak or stainless steel. The amphorae are hand made in Tuscany by the Manetti family using the same clay pits that the Etruscans used for their pottery thousands of years ago. The Viognier is whole-cluster pressed and fermented using only its own indigenous (wild) yeasts. The name 20m3, or “Twenty Cubic Meters”, derives from the estimated amount of gold in the world. Aaron was so intrigued by this idea that he decided to use if as the name for the Viognier which is also precious, rare and golden colored. " -POTT Wine Web

From the coveted east-facing RISE section of Elswick Vineyard high above the banks of the Navarro river (across from Roderer Estate). Deep in the deep end, embraced by the fog. Almost as cool as it gets in California; finally a site for a California Pinot that isn’t too alcoholic, jammy or fat. Whole-cluster fermented in Burgundian open top wood vats. A beautiful deep garnet color with bright reflections. Cherry, plum, tobacco, forest floor, apricot, bacon, vanilla and blood orange. Astonishing density, beautiful acidity, soft tannins.

Because Aaron specializes in small-lot, single-vineyard wines he is exceptionally picky about what goes in to those bottles. He wants typicite and wines that will marry perfectly together for excellent ageing. Every year, a couple of the barrels don’t quite fit the bill. They are equally classy, just not as classical.
So, pott has created a second wine: Napa Valley Cabernet Sauvignon. Comprising the complexity of 33 different soil types, the intensity of the mountain vineyards with the silkiness and the pleasure of the valley floor. It’s your drink-now, goes-with-everything bottle of great Napa Cab.

Incubo began as a tiny, 12 case cuvee that Aaron made from the 1/2 acre vineyard that was already planted on our property when we bought it in 2004. Over time we expanded the vineyards to almost 5 acres, and Incubo grew to around 80 cases. The name derives from a mythical creature supposed to guard a hoarde of treasure. The dragon symbol is in fact the signature of a medieval painter named Lucas Cranach, who often depicted wine and merry-making in his work. We visited a gallery full of his paintings while we were in Germany in 2004 for the World Cup, which is where we got the inspiration.

This is a real blockbuster Mt. Veeder Cabernet Sauvignon. The wine has a distinct purity with deftly textured tannins formed from the ancient sandstone soils. The layers here are intense and stay with you for ages. There is a very small percentage of Cabernet Franc that lifts the mid palate and brightens the complex aromatics with blue fruits and cedar cigar box.

The 2019 Kaliholmanok is our wine of the vintage, with the classic lift and purity of Spring Mountain. Black fruits, tobacco, cedar, rose, tar and roast duck. Then a dense attack of plum, cherry, blackberries. Wafts of nutmeg and dark cocoa. Solid, classy mid-palate. Finishes with fresh blackberries and currants fading to cherry, tobacco and finally blackcurrants and violets in seemingly endless length.

Up front attack of blackberries, toffee, plums and cherries, great depth and complexity here. Tight grain tannins hide a great quantity of tannin in velvet layers of softness. The persistence here is astounding. The finish is endless, a theatre piece that unveils itself in three acts from blackberries and cherries to black licorice, finally fading to sweet plum that is reluctant to leave the palate.

As an unabashed lover of Cabernet Franc this is really the crown jewel of our beautiful Mt. Veeder estate. This wine is incredibly aromatic. The 2021 is dark blue tinged purple hews, with notes of wild blueberry, boysenberry pie, cigar box, iris, chocolate, espresso and violets on the nose. Notes of violet, lavender, cherry, blueberry and plum in a rush of rich attack leading to plums, tobacco and crushed rock in a black truffle finish. Taut, muscular fruit has a long, rich finish.

Soil Type/Climate: The soils are well-drained and made up of weathered sandstone and shale. The vineyard is often above the fog in the morning. Daytime highs are cooler than the Napa Valley floor.
